Pumpkin Cookies!

We ate these in the park and they were devoured. Thanks Rhetta!

Pumpkin Cookies:

(I never really measure, so approximate)

2 1/2 cup flour – I use whole wheat
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 cup butter 
3/4 cup brown sugar
1 can pumpkin puree – I use canned
1 egg
1 tsp vanilla
add nuts, dried fruit or chocolate as desired

Cream butter and sugars. Add pumpkin, vanilla, egg and mix. Add dry ingredients and anything else you want to add in.
Bake for 11 mins @ 350.
